Chia Pudding with Berries

This chia pudding recipe packs a powerful punch of gut-healthy probiotics from kefir and antioxidants from berries which support urinary tract health, immune health and the gut microbiome. As an added bonus, chia seeds contain prebiotics which feed the beneficial gut bacteria. They are rich in anti-inflammatory omega-3 fatty acids which help lower cholesterol levels, and chia seeds are good source of protein, containing all nine essential amino acids. Kefir adds more protein to the recipe as well.

Yield: 1 serving

3 Tbsp chia seeds
⅔ cup kefir
¼ cup coconut milk or other milk of choice
½ tsp vanilla
½ cup raspberries or blueberries
1 tsp honey

Place chia seeds, kefir and coconut milk into a bowl or jar. Stir well for about 15 seconds, and then stir again after a minute or so to avoid clumps of chia seeds from forming. Place in the fridge for about 20 minutes to allow the pudding to thicken.

Top with berries and drizzle with honey. Enjoy!
